Warm up this winter with some delicious soup

The sky is gray. The days are short. The weather is cold. So what better way to warm up your body -- and keep your waistline small -- than with a tasty bowl of soup from the L A Lite cookbook? Here are two easy-to-follow recipes we know you'll enjoy.

French Onion Soup

1/2 cup raw white onion slices
1 packet low-sodium beef bouillon
1 cup water
1 bay leaf
1/4 tsp. onion powder
1/4 tsp. lite salt
6 Melba toast rounds
1 oz. reduced-fat or part skim cheese or mozzarella
freshly ground pepper, to taste
dash of parsley
nonfat cooking spray

Saute onions in skillet with nonfat cooking spray. Add beef bouillon to the onions. Add water, salt, pepper, bay leaf, and onion powder. Bring to a boil and allow to simmer 10-15 minutes. Remove bay leaf.

Place soup in a bowl. Top with Melba toast. Sprinkle cheese over Melba toast. Microwave soup until cheese is melted. Sprinkle with parsley and serve hot.

Cream of Chicken and Rice Soup

5 oz. chicken breast, chopped into bite-sized pieces
1 tsp. finely minced onion
8 oz. skim milk
1 L A Lite Cream of Chicken soup mix
1 cup fresh broccoli florets
1/4 cup cooked brown rice
freshly ground pepper, to taste
nonfat cooking spray

In a small sauce pan sprayed with nonfat cooking spray, saute chicken and onion. Add milk and soup into saucepan or Dutch oven; stir until blended. Add broccoli; simmer for 10 minutes. Add cooked rice. Heat through. Season to taste with pepper.
