New breakfasts for champions

Breakfast is the most important meal of the day. But are you tired of the same old cold cereal, and can't find anything that's tasty and healthy? Good thing you've turned to My L A Weight Loss Diary.

Below are two of our favorite breakfast recipes from the L A Lite Cookbook to spice up any morning routine. Each can be made in just minutes.

Breakfast Burrito

Nonfat cooking spray
1 Tbsp. diced green pepper
1 Tbsp. chopped green onion
1 cup egg substitute
1/4 tsp. lite salt
1 Tbsp. diced tomato
1/2 whole wheat tortilla
1 oz. reduced-fat pepper jack cheese
1 Tbsp. fat-free sour cream

Coat medium skillet with nonfat cooking spray. Heat over high heat. Add pepper and onion to skillet. Sauté 2 to 3 minutes, or until vegetables start to soften.

Pour egg substitute into skillet, distributing evenly. Sprinkle with lite salt. Once eggs are cooked through, turn down heat; add tomatoes, cook 1 minute until tomatoes are warm.

Place egg in middle of tortilla; top with cheese. Roll up tortilla into a burrito. Top with fat-free sour cream.

French Toast

1/2 cup egg substitute
1 Tbsp. skim milk
Dash of cinnamon
Dash of nutmeg
Dash of sugar substitute
2 slices lite bread
Nonfat cooking spray
12 strawberries, sliced

Combine egg substitute, milk, spices, and sugar substitute in a shallow bowl; mix well. Add slices of lite bread to egg mixture and let stand until egg mixture is absorbed.

Coat skillet with nonfat cooking spray and heat over medium heat. Place bread in skillet and brown on both sides.

Place on serving dish; top with sliced strawberries.

Servings: 1
