Summer seafood sensations

It’s that time of year. Summer is upon us, and so is some great eating. I know that here at L A Weight Loss, we only think of the beach during these summer months, and that means seafood!

We've picked out some of our favorite seafood treats that anyone can enjoy. These dishes are high in protein and easy to make, and are sure to make the "favorite" list at your home.

Broiled Ginger Scallops

5 oz scallops
2 Tbsp. low-sodium soy sauce
1 garlic clove, minced
1 Tbsp. ginger, minced
2 Tbsp. lemon Juice
1/2 tsp. brown sugar artificial sweetener
Nonfat cooking spray

Arrange scallops in a single layer in a baking dish.

Heat soy sauce in a small saucepan over a medium heat. Add garlic, ginger, lemon juice, and brown sugar. Simmer 2 to 3 minutes. Allow to cool to room temperature.

Pour cooled sauce over scallops. Cover and refrigerate at least two hours.

Preheat broiler.

Remove scallops from marinade. Place scallops in a single layer on a broiler pan coated with nonfat cooking spray.

Broil 4 inches from heat until opaque, approximately 6 to 8 minutes, turning once during cooking.

4 oz raw salmon fillet
1/4 tsp. ginger, ground
1/3 cup orange juice
1/2 cup canned mandarin oranges, drained
1 Tbsp. sesame seeds, toasted

Simmer 15 minutes, flipping occasionally to cook evenly.

Add oranges and sesame seeds, cooking another 1 to 2 minutes, or until oranges are warmed through. Season to taste with lite salt.
