Ron Layne's secret weapon: his counselor!

You got the chance to meet Christina Young, Greg Thompson's personal L A Weight Loss counselor, and a key factor in his success.

Now, in the second installment of our counselor podcast series, we're happy to introduce James Maxwell, counselor for Ron Layne. With James's support and guidance, Ron dropped 74 pounds -- and literally saved his life.

James was a counselor at the Glamorgan Center in Calgary, Alberta, where Ron went three times a week for 10 months. I got in touch with James recently, and were immediately impressed by his candor and enthusiasm. He clearly loves his job, and knows how to motivate people!

Best friends through thick and thin

Remember Thelma and Louise? That's what I thought of when I heard this weight loss story!

Becky Sanders and Ruth Stockell of Nashville, Tenn., are a pair of peas in a pod -- best friends since childhood. They did everything together, from going to school, to playing outdoors, to gaining weight.

Becky was also hypothyroid, which slowed down her metabolism and made her more susceptible to weight gain. That was enough to give her high blood pressure, and her doctor put her on medication to treat both conditions. By then, she had hit 225 pounds.

For Ruth, it was getting laid off at work that pushed her over the edge. She turned to food for comfort, and chocolate was her worst enemy. At 303 pounds, she became unsteady on her feet, and felt very unhealthy.

Then Becky and Ruth saw an ad on TV for L A Weight Loss in September 2005. They said to each other, “If you do it, I'll do it.” They called the Hermataige center, and told the counselors they were in this together. That day, Becky and Ruth formed a “buddy system” to lose weight -- and never looked back.

The friends cooked together, discussed their eating habits, and kept tabs on each other's progress. If one was having a bad week, just a few words of encouragement from her best friend was all she needed to keep going.

And Becky and Ruth have fabulous results to prove it. Becky has lost 79 pounds, and is down to 146 pounds. And Ruth is now at 192 pounds, losing 111 pounds so far. In total, the friends have lost 190 pounds!

Everyone around Becky and Ruth are noticing the beautiful ladies. Becky's friends and family compliment her on her fabulous new body, and Ruth and her ex-boyfriend are now dating again.

The gals also enjoy going shopping together, and feel younger and more vibrant now that the excess weight is gone. And how could you not? Congrats, ladies!

Counting up to the next 100 weight loss stories

Break out the pinatas and party hats! With this post, My L A Weight Loss Diary hits a major milestone -- our 100th post!

That’s 100 stories detailing the hard work people undertake to accomplish their goals ... 100 examples of lives changing for the better ... and 100 points of inspiration for anyone seeking to do the same.

You've been able to get up close and personal with these amazing people through podcast interviews. We’ve also featured expert advice through interviews with Dr. Boyd Lyles, our resident health expert; and nutritionist Jennifer Simmons, who’s offered tips for eating well and staying health.

Our first post last November detailed the weight loss story of John Spino, who went from 310 to 182 pounds, and controlled his diabetes as a result. Since then, we’ve featured nine people on My L A Weight Loss Diary who were able to control their diabetes through proper eating and exercise.

We've also showcased 15 people who lowered their high blood pressure by losing weight, including Greg Thompson, our once-500-pound man. He was one of our favorite interviews, and we're sure that his inspirational story moved many to improve their lives.

Another of our favorites is Georgina Fowler's story. Georgina explains in her own words how she beat thyroid cancer, then lost 98 pounds on L A Weight Loss! Now that's what I call amazing.

Of course, none of this would be possible without YOU, the readers, who visit here every day to congratulate and encourage these women and men from around the country. Cholesterol, don't go breakin' my heart!

Yes, it's true: While cholesterol is needed for healthy nerve and hormone function, too much can lead to cardiovascular disease -- America's No. 1 killer.

Lowering cholesterol naturally starts by limiting fat intake. But where do you go from there? Fortunately, we grabbed Dr. Boyd Lyles' ear for a few minutes to get the lowdown on lowering cholesterol, and preventing it from creeping up the scale in the first place.

Losing the weight for a warm embrace

There are few things in this world Judy Pederson misses more than her daughter's arms wrapping all the way around her. Yet that's exactly what she was missing when she tipped the scales at 272 pounds, and her daughter could no longer give her a big bear hug.

The 48-year-old physical therapist also found it hard to motivate her patients while she was carrying all that weight. To complicate matters, Judy's blood pressure crept up, and she began to experience some arthritis.

While Judy tried other weight loss plans, she was never able to keep the weight off. Desperate, she even considered gastric bypass surgery, but the procedure's complications scared her away.

Finally, Judy's frustration level hit its peak when she couldn't enjoy going out anymore. So she walked into the Madison, Tenn., L A Weight Loss in June 2005 -- and lost 10 pounds just in the first week!

Motivated by this early success, Judy began walking 2 miles a day. Now, she has worked her way up to walking 4.5 miles a day!

The new eating habits and exercise helped Judy meet -- and surpass! -- her goal weight of 150 pounds. She's now a slender 130 pounds ... and that's an accomplishment worthy of some hugs. Way to go, Judy!

Weight loss more than cosmetic change for Cherie Anderson

Idaho mom Cherie Anderson was thrilled when the stork brought her a beautiful baby girl. She wasn't so thrilled with the post-partum depression -- or the extra 45 pounds she gained.

Cherie had struggled with weight since junior high school. She tried all kinds of diets, from herbal remedies to formal programs. But no matter how hard she tried to eat right and exercise, nothing worked.

The situation only got worse after her pregnancy, when Cherie hit 230 pounds. She was so self-conscious about her weight that she had trouble being intimate with her husband –- a definite strain on their marriage. And her self-esteem, confidence, and energy plummeted.

Then hope came at the cosmetics counter at the mall where Cherie worked. One of her favorite clients told her about L A Weight Loss, and the success she'd had on the program. This recommendation stuck with Cherie, especially when she passed the L A Weight Loss center on her corner, and decided to pull in for a consultation.

Once she joined, she was hooked. Cherie started to lose weight right away -- eight pounds in her first week! And weighing in three times a week motivated her to keep on losing.

Twenty-eight weeks and 75 pounds later, Cherie is a bonafide success at 155-pounds goal weight!! Her energy is through the roof when she goes to the sand dunes with her husband and daughter. And who wouldn't get a kick out of buying smaller shirts at the mall?

Wisconsin couple tosses 132 pounds overboard

For Craig and Pam Sabee of Appleton, Wisc., sailing is a big part of their life. But it was no longer fun when they gained so much weight, they had trouble maintaining their balance while walking the deck in rocky waters.

Weight had always been an issue for Pam. As a teenager, her weight was in constant flux. She tried several diets, but always gained the weight back, felt hungry, or had to eat unappetizing foods. She also had a hypothyroid, which slowed her metabolism, causing additional gain weight.

For Craig, it was married life that started his weight troubles. He and Pam loved to cook. And cook. And cook some more. The pounds just added up.

Then Craig was diagnosed with rectal lymphoma. He underwent chemotherapy, and had his large intestine removed. While his doctors were doing some follow-up blood work, they discovered Craig also had high blood sugar levels, and was borderline diabetic.

This news was the last straw for the couple. Pam was up to 167 pounds, and Craig to 247 pounds. They knew they had to do something about their weight, so they decided to join L A Weight Loss in February 2006.

The Sabees learned to eat healthy foods in proper portions, and supplemented their eating plan with L A Lite bars. By Christmas, Pam lost 45 pounds, and Craig lost 87 pounds -- for a combined 132-pound weight loss!

Now Pam isn't tempted by Big Mac commercials anymore, and eats lots of fiber-rich foods, such as dates and unsalted almonds. And Craig no longer goes for the buttered popcorn for a snack, instead opting for vegetables and fresh fruit. Plus, Pam's thyroid is stabilized, and Craig's blood sugar level is normal.

The couple exercises much more now too, something they wouldn't have dreamed of doing when they were at their heaviest. Now when they go sailing, they have no trouble balancing themselves on the deck when the waters get rough.

Craig also runs outdoors regularly, while Pam walks five to six miles every day on her treadmill. They feel like there's nothing they can't do -- and at 132 pounds lighter, it looks like smooth sailing from here on out!

A lifetime of weight gain, one year to take it off

Whether she was happy, sad, angry, or just plain bored, Louise Elske turned to food to comfort her emotions. In a letter she wrote to my colleague Katie, she describes how this emotional eating contributed to her lifelong weight battle.

She was wearing "chubby clothes" at 10 years old. She had her wedding dress custom made because she couldn't find larger sizes at bridal shops. And she was on high blood pressure medication.

Louise did something about her weight when she hit 294 pounds at age 30. She lost 115 pounds, then spent the next 17 years putting back on the pounds -- plus 20 more.

Then in May 2005, Louise, 57, joined her best friend on a trip to the L A Weight Loss Center in Madison, Wis. By the time she left the center, Louise had committed herself to losing 50 pounds in 25 weeks.

And commit she did. Louise wrote down everything she ate, and measured all her food to ensure proper portions. When she got her weight under 200 pounds, her doctor started weaning her off her blood pressure medication. She also started exercising three times a week.

She also learned to expand her love for food to include healthier choices, such as chicken, fruits, and vegetables.

When she hit her initial goal of losing 50 pounds, Louise kept going. After 12 months on the program, she had dropped 137 pounds!

Louise has now maintained her slender 177-pound figure for a year, and even inspired her two sons to join L A Weight Loss, too. They've lost a combined 88 pounds on the program so far.

Meet the counselor behind Greg Thompson's success

Whenever I chat with L A Weight Loss customers, I don't get very far before they drop the name of their personal counselor. It's no surprise: Their counselors are a major contributors to their success. L A Weight Loss customers meet with their personal counselor three times a week to get the motivation and nutritional advice that helps them hit their goal weight.

That's the story behind our new My L A Weight Loss Diary feature -- podcasts with the personal counselors of people you've gotten to know on this site. And what better way to kick this off than with Christina Young, the woman who put our resident farmer Greg Thompson well on his way to his goal weight of 240 pounds.

Greg met Christina at the Eau Claire, Wis., center where he's gone three times a week since he started the program 15 months ago. Marnie and I recently caught up with Christina to get the inside scoop on what it was like meeting Greg at 508 pounds, and how she helped him develop a plan to realistically shed hundreds of pounds.

A heart-to-heart with Dr. Lyles

Did you know that heart disease is the No. 1 killer of women in America?

In fact, nearly twice as many women in the United States die of heart disease and stroke than from all forms of cancer, including breast cancer, according to the American Heart Association.

This sobering stat was reason enough for Marnie and me to get a hold of Dr. Boyd Lyles, and ask him all about heart disease, including causes, risk factors, symptoms, treatment, and prevention.

College days no longer weigh on Stacy Henry's mind

It's called the “Freshman 15” for a reason: A lot of students gain weight their first year in college. But for Stacy Henry of Jeffersonville, Pa., it was more like the “Undergrad Overindulgence.” By time she was hearing “Pomp and Circumstance” at her college graduation, Stacy had ballooned to 211 pounds.

Things only got worse when she started shopping in plus-size stores. The looks she got as she browsed the aisles made her uncomfortable and self-conscious. She felt everyone judged her on what she looked like on the outside.

Then Stacy's sister asked her to be her maid-of-honor at her wedding. It was the motivation she needed to finally drop the weight that kept her from realizing her full potential.

With three months till the big day, she saw a commercial for L A Weight Loss, and called the local Newark, Del., center. There she met with nutrition experts, who helped her incorporate more healthy foods -- such as chicken, fruit, and vegetables -- into her diet. Gone were the bags of Doritos, and soon, so were the extra pounds.

Stacy lost 40 pounds for her sister's wedding, and looked stunning as she walked down the aisle in a trim, 171-pound frame. But she didn't stop there. Stacy stuck with the L A Weight Loss plan, and is now a slender 140 pounds!

With her weight down and her self-confidence high, Stacy loves to shop for trendy clothes and has no problem wearing a bikini. She no longer fears people's judgments, and the only stares she gets are the ones eyeing her beautiful new body!

Firefighter burns fat, saves his own life

Couple hot flames with bulky suits and 60-pound oxygen tanks, and fighting fires can wipe out even the healthiest people. That's why firefighters need to be in tip-top physical shape to do their job safely and well.

But for volunteer firefighter Ryan Hargis of Kingston, Tenn., his physical shape was holding him back. At 253 pounds, Ryan had borderline high blood pressure and cholesterol. He couldn't keep up with his fellow East Roane County firefighters or his seven- and nine-year-old boys like he used to.

In fact, Ryan's doctor told him to get his blood pressure down in three months, or face medication. That was the final straw for Ryan.

You can hear about this moment of truth and more from an interview Janelle and I recently conducted with Ryan. We talked about being a firefighter, and how losing weight has affected his life. Warning: It's a scorcher!



Can't take the heat? Here's the short version of Ryan's journey:

After mulling over his diagnosis, Ryan remembered seeing TV commercials for L A Weight Loss, and thought the plan looked like something he could easily follow. So he took a short trip to the L A Weight Loss center in Knoxville, Tenn., on April 15, 2006 -- the first step toward dousing his high blood pressure and cholesterol.

Since that date, Ryan has lost 65 pounds and is now down to 188 pounds!! He credits his success to how little he had to change his life. The L A Weight Loss nutritionists taught Ryan how he could still eat his favorite foods, but in moderation. Ryan also learned how to overcome his carb cravings with healthier options such as fruits.

Ryan's blood pressure is now normal, and he has a lot more energy to fight fires and play with his kids.

When Ryan reached his initial goal weight of 200 pounds, he started to incorporate exercise into his healthy lifestyle to keep his muscles strong for just about any physical challenge.

In fact, it was Ryan's newfound energy and strength that enabled him to make a big difference for his firefighting squad and his county. Toward the end of last year, his team was called to put out a large house fire. Thanks to a fit and trim body, Ryan was able to support his team every step of the way without getting winded. The squad saved the house!

In recognition of his efforts, Ryan won the Firefighter of the Year Award for East Roane County. Way to go, Ryan and team!

Update: Georgina Fowler surpasses her goal weight!

Last November we brought you heart-wrenching the story of Georgina Fowler, the Texas mom who beat thyroid cancer, then lost 98 pounds on the L A Weight Loss program.

Now Georgina has a new milestone to be proud of: Since November, she's dropped another 29 pounds, surpassing her goal weight by 9 pounds!!

She's now a stunning 148 pounds -- and still cancer-free. What an amazing and inspiring journey!

The perfect wedding dress, in the not-so-perfect size

Many women keep an old pair of "skinny jeans" around as motivation to lose weight. But it’s not often women buy wedding dresses six sizes too small, then challenge themselves to fit in to them.

But Paula Ray did just that. The 43-year-old bride-to-be searched high and low before she fell in love with the perfect wedding dress. The good news: It was on sale for $99. The bad news: It was a size 6, and she wore a size 12.

Growing up, Paula never had a weight issue. It was only after she gave birth to her daughter, Amber Rose, that she starting gaining weight.

That was 26 years ago. She’d been trying to control her weight ever since. And when Paula quit smoking 12 years ago, the situation worsened, as she replaced cigarettes with food.

Then, in 1997, she saw promotional pictures of herself taken for her DJ business. Seeing what she looked like at 157 pounds made Paula realize she had to do something. She tried all the latest fad diets, but the weight kept coming back.

Enter John, the man Paula would marry. John proposed to Paula in 2004, and when she found the perfect dress -- but in half her size -- she joined L A Weight Loss for help.

Paula needed to hit her weight goal of 126 pounds and lose 4 inches to zip up her dress ... which is exactly what she did! She was quite the blushing bride as she walked down the aisle comfortably in her size 6 dress in February 2005.

Her family and friends have noticed a big change in Paula, too. She’s come out of her shell, and is more vibrant and full of life than ever.

Nancy LaFond hits the big time with her small figure

Nancy LaFond was healthy and thin her whole life -- until she was diagnosed with Hashimoto's Thyroiditis in 2005.

Hashimoto's Thyroiditis is a chronic autoimmune disease that affects the thyroid. People with this condition have trouble burning calories, and can gain up to 60 pounds as a result.

Despite eating right and exercising regularly, Nancy couldn't stop her body from packing on the pounds. At one point, she even gained seven pounds in a single week!

Here's the nutshell version:

After she was diagnosed, Nancy worked with her doctor to stabilize her medication before she could tackle her weight gain. When her doctor gave her the go-ahead to take on her extra 30 pounds, she knew she wanted to join a program that would address her medical condition, while still helping her lose the weight.

This was easier said than done. When Nancy called one popular weight loss program and explained her situation, the receptionist told her she would have to stick with the set program, just like their other customers.

Discouraged and frustrated, Nancy made her next stop at the L A Weight Loss Center in Pineville, N.C. Two of her friends had successfully lost weight on the program, and she knew the program was based on customized meal plans.

When Nancy walked in the center, she immediately knew she'd made the right choice. Her personal counselor, Sarah, told her they were used to tailoring programs around thyroid ailments. In fact, 70 percent of the center's customers had thyroid issues.

Nancy worked with Sarah to refine her already healthy diet into one that would help boost her metabolism. This, along with Nancy's continuing exercise regimen, helped Nancy lose 30 pounds in eight months, bringing her back to her original 127-pound frame!! That was over a year ago -- and the weight is still off.

In fact, Nancy was so successful that L A Weight Loss chose her as their spokeswoman for its 8-Week Body Makeover campaign. She's currently appearing in TV and print ads to share her story, and inspire women nationwide to shape up before Memorial Day.

Whoopi Goldberg discusses weighty matters on "Today"

You might have seen our newest spokesperson, Whoopi Goldberg, showing off her new figure on our Web site and in commercials aired across the country.

This morning she took her story to "Today," where she chatted with Al Roker, Ann Curry, and Natalie Morales about dropping 45 pounds in 23 weeks on the L A Weight Loss program.

Danielle Anderson tells extra pounds to take a hike

Danielle Anderson's not afraid of heights, but she was terrified when she boarded the roller coaster at Busch Gardens in Tampa two years ago.

That's because Danielle couldn't fit the safety buckle around her 287-pound body. And that was much scarier than any dips and twists on the ride.

Danielle had struggled against a family history of weight her whole life, hitting 200 pounds as early as age 12.

When she visited her doctor at age 30, Danielle was diagnosed with borderline high blood pressure. The doctor gave her six months to get in shape before putting her on medication. He also warned that without diet and exercise, she could be dead by age 40.

This was the hard truth Danielle needed to make a change. But she didn't know where to begin. Her best friend Cindy convinced her to join L A Weight Loss, and together, they started in January 2005.

Danielle lost 7 pounds her first week, and kept right on going, losing a total of 126 pounds (!!) over two years. Some of her secret weapons: cutting out alcohol, eating lots of vegetables and fish, joining a softball league, and -- her favorite -- hiking.

And though Danielle and Cindy now live on opposite coasts, they're still committed to health and activity. In fact, they recently went on a hiking trip in Arizona, where Danielle met her new boyfriend!

Plus, her blood pressure is back to normal, and Danielle is confident she can reach her final goal of 145 pounds. We'll be sure to update you when she does. Keep up the good work, Danielle!!

Hop to it with this easy Easter Sunday menu

Forget hiding Easter eggs. This Sunday, your guests will be stumped trying to find the extra fat and calories absent from this light and tasty Easter feast. Be sure to make extra, as this meal will satisfy even the heartiest of eaters at your table.

Course 1: Creamy Potato Soup

Ingredients

6 slices low-sodium turkey bacon
2 cups chopped onions
2 lb. thin-skinned potato, cut into 1/2-inch cubes
5 cups low-sodium chicken broth
1/4 cup flour
5 cups skim milk
1 tsp. freshly ground pepper
1/2 cup chopped fresh parsley

In a large sauce pan, cook bacon until crisp, then drain on paper towels. When cool, chop into small pieces and set aside. Add onion to pan with bacon drippings and cook until tender. Add potato cubes and broth. Cover and bring to a boil.

Reduce heat, and simmer until potatoes are tender, about 10 minutes. In a small bowl blend flour and milk until smooth. Add to broth and boil for 1 minute, stirring frequently. Add pepper and parsley. Ladle soup into bowls and sprinkle with bacon pieces.

Servings: 8
Serving size: 1 1/2 cups
Counts as: 2 starches, 1 dairy, 1 fat



Course 2: Eggplant Caponata

1 Tbsp. olive oil
1 medium eggplant, peeled and diced
2 cloves garlic
1/2 cup chopped red onion
1/2 cup chopped green bell pepper
1/4 cup water
1/4 cup chopped fresh parsley
3-4 Tbsp. black olives, pitted and chopped
2 Roma tomatoes, seeded and chopped
2 Tbsp. red wine vinegar
1/4 tsp. salt
1/8 tsp. pepper

Preheat oven to 350ºF.

In a baking dish, combine olive oil, eggplant, garlic, onion, and green pepper. Cover and bake for 15 minutes. Remove from oven and add water, parsley, black olives, tomatoes, vinegar, salt and pepper.

Return to oven and bake 30 minutes, or until eggplant is soft. Remove from oven and transfer to a bowl. Cover and refrigerate for 8 hours or overnight before serving. Serve chilled.

Servings: 18
Serving size: 1/3 cup
Counts as: 1 vegetable



Course 3: Spring Salad

4 Tbsp. white wine vinegar
3 Tbsp. orange juice
1 Tbsp. olive oil
2 packets artificial sweetener
1/4 tsp. light salt
1/4 tsp. black pepper
6 cups mixed greens
1/2 cucumber, thinly sliced
1/2 lb. snow pea pods, cut in to thin strips
1 cup seedless grapes
2 oz. light feta cheese

In a small bowl, whisk together vinegar, orange juice, oil, sweetener, salt and pepper. In a large salad bowl, combine greens, cucumber, snow peas, and grapes. Pour dressing over salad and mix well. Top with cheese. Serve chilled

Counts as: 1 fat, 1 starch, 1 vegetable



Course 4: Glazed Ham

4- to 6-lb. ham
1 1/2 cups apricot halves in light syrup
1/2 cup no-sugar-added apricot preserves
1/2 tsp. ground cloves
1/2 tsp. ground ginger

Place ham in baking pan. Pour apricot halves and juice over ham. Sprinkle with cloves and ginger. Heat ham in oven according to package directions.

To prepare glaze, place preserves in small dish and microwave 10-20 seconds, until preserves begin to thin. Brush ham with warm glaze during last 30 minutes of cooking.
Continue to brush ham every 10 minutes until cooked. Note: Preserves may need reheating between brushings.

Allow ham to sit 5 minutes before slicing. Serve warm

Serving size: 3 or 5 oz cooked ham
Counts as: 1 protein, 1 fruit



Sides:

Wild Rice Pilaf

1 1/4 cups water
3 cups low-sodium chicken broth
1 1/2 cups uncooked wild rice
1 Tbsp. light margarine
3 cups sliced mushrooms
1 cup chopped green onions
1/2 cup finely chopped fresh parsley
1/3 cup toasted chopped pecans
3/4 tsp. poultry seasoning
1/2 tsp. light salt
1/4 tsp. black pepper

Combine water and broth in a medium saucepan and bring to a boil. Add wild rice and cover. Reduce heat and simmer 1 hour or until tender. Drain excess liquid.

Preheat oven to 325ºF.

Melt margarine in a large, nonstick skillet over medium-high heat. Add mushrooms and onion. Saute until tender. Remove from heat. Stir in parsley, pecans, poultry seasonsing, salt, and pepper. Combine rice and mushroom mixture in a 2-quart casserole, coated with nonfat cooking spray.

Cover and bake at 325ºF for 25 minutes.

Servings: 8
Serving size: 1/2 cup
Counts as: 1 starch, 1 vegetable.



Lemon Green Beans


1 lb. fresh green beans, cleaned and trimmed
1/4 cup chopped green peppers
2 Tbsp. fresh dill
1 green onion, thinly sliced
1 tsp. ground fresh garlic
2 tsp. olive oil
2 Tbsp. lemon juice

Place green beans in 4 quarts of boiling water for 4 to 5 minutes. Drain and run under cold water to stop cooking process. In a large bowl, combine green beans, peppers, dill, onion, garlic, olive oil, and lemon juice. Toss until coated and serve.

Servings: 4
Serving size: 1/2 cup
Counts as: 2 vegetables



Creamed Spinach

2 lb. fresh baby spinach
2 Tbsp. light margarine
2 tsp. flour
3/4 cup skim milk
1/4 tsp. black pepper
Dash of nutmeg

Cut and discard stems from spinach. Rinse and pat dry. Bring 2 quarts water to boil.
Add spinach; bring back to a boil, and cook for 3 minutes. Drain in colander, pressing spinach with hands to remove any excess moisture. Finely chop the spinach.

Melt margarine in a saucepan, add flour and cook, stirring until a light golden brown. Slowly add milk, whisking until thick. Add spinach, pepper, and nutmeg. Toss together and serve.


Servings: 4

Counts as: 1 vegetable, 1 fat



Course 5: Bread Pudding

1 cup egg substitute
3 Tbsp. skim milk
2 tsp. cinnamon
1 Tbsp. vanilla extract
6 packets Splenda
4 slices diet bread
2 Tbsp. raisins

Preheat oven to 375ºF.

In a bowl, mix egg substitute, skim milk, cinnamon, and vanilla extract. Tear bread into small pieces and add to mixture. Spray an 8x8 baking sih with nonfat cooking spray and pour in bread mixture. Bake at 375ºF for 10 minutes. Reduce heat to 350ºF and bake for 30 minutes, or until center is firm.


Servings: 4
Serving size: 1/4 pan
Counts as: 1/2 protein, 1 starch



Sparkling Fruited Gelatin

2 apples
1/2 cup canned crushed pineapple, drained
1 tsp. lemon juice
10 grapes
1 3 oz. package, sugar-free mixed-fruit flavored gelatin mix
1 cup hot water
6 oz. diet ginger ale

Peel, core and cut apples into thin slices. Place apple slices in medium bowl. Add pineapple and lemon juice. Slice grapes in half and add to fruit mixture.

In a separate bowl, mix gelatin and hot water. Stir until gelatin is dissolved and pour in ginger ale. Refrigerate 30 minutes, or until gelatin mixture is the consistency of raw egg whites. Add the fruit mixture to gelatin and fold in gently. Refrigerate until firm. Serve chilled.

Servings: 4
Serving size: 1 cup
Counts as: 1 fruit



Spiced Tea

4 cups water
2 cinnamon sticks, broken into pieces
12 whole cloves
4 decaffeinated tea bags
Juice from 2 oranges
Sugar substitute to taste

In a saucepan, combine water, cinnamon, and cloves. Bring to a boil and remove from heat. Add tea bags. Steep for 5 minutes. Remove tea bags. Stir in orange juice. Sweeten to taste.

Servings: 5
Serving size: 1 cup
Counts as: 1 unlimited beverage, 1 condiment.
